Scallop and Uni Crudo 




 


METHOD
 
1. Slice the scallops breadthwise into even, medium-thick pieces to maintain their natural texture.
2. Arrange the scallop slices on a plate, forming a circular pattern that overlaps slightly for an elegant presentation.
3. Using a brush, lightly coat each scallop slice with olive oil. If a brush isn’t available, drizzle olive oil evenly over the plate, ensuring each piece is glistening.
4. Nestle watercress leaves between the scallop slices to add a pop of colour and freshness.
5. Gently lay the sea urchin strips on top, adding a touch of luxury and rich flavour.
6. Season with a pinch of fleur de sel and a few cracks of Kampot pepper. Finish with a light drizzle of lemon to brighten the dish.

Tip: Serve immediately to enjoy the delicate flavours and textures at their peak.
