This is not your average apple tart. Inspired by artist Lauren Tsai’s My Dream: Our Hill installation at LANDMARK, The Apple Elysium is a visual masterpiece as much as it is a flavour bomb. Picture this: a golden brown butter tart base, topped with a perfectly sculpted red apple-shaped Tahitian Vanilla Chantilly and roasted apple, all resting on a bed of green moss-like sponge. Only 20 are available daily until 6 April, so get there early!

If you prefer your spring treats available beyond a two-week window, The Mandarin Cake Shop’s signature pastries are a solid bet. The Jasmine Tea, Apricot & Pistachio pastry is a personal favourite this season – the apricot jelly adds just the right amount of zing, making it an ideal refreshing bite for the season. And if vanilla desserts aren’t usually your thing, their Tahitian Vanilla Entremet might just convert you. Light, fragrant, and surprisingly moreish.
