Adjoining its sister restaurant, the three-Michelin-starred Caprice, Caprice Bar stands out on its own with its gentleman-club inspired décor, boasting velvet sofas, wood panelling, and an intimate ambiance. With panoramic harbour views akin to its sibling establishment, it offers a unique setting for indulgence.
 
Did you know they also offer a cheese platter, priced at HKD 488, with options from Caprice restaurant’s curated selection of cheese – often said to be the best in town? You can also indulge in a decadent Pata Negra croque-monsieur and wagyu beef burger featuring comté and reblochon, alongside foie gras. I personally find it hard to resist. But food isn’t what’s brought us here today.
 
Following the success of Terroir Volume One, his cocktail menu introduced during the pandemic, Caprice Bar Manager, Anyss Saintilan, has recently unveiled Terroir Volume Two. As the name suggests, this menu takes you on a journey through France's regions, both continental and overseas. Each cocktail, priced at HKD 220, promises to tantalize the senses with the bounty of French regional produce.

Excursions to the Outre-mer: La Vanille Bleue, Sunny Lychee

Embark on a tropical journey with La Vanille Bleue, a luscious blend of  blue vanilla from Reunion Island and tequila sour, evoking the exotic essence of the Indian Ocean. The tested and approved Sunny Lychee, on the other hand, brings the vibrant flavours of Martinique to life, combining HSE XO rum with lychee and hints of ginger for a refreshing, sun-kissed sip.
 

A Sophisticated Detour to Cognac: La Banane, Rose Pamplemousse

In Cognac, tradition meets elegance. La Banane, my favourite cocktail among the four I’ve tasted, is a sophisticated mix of banana-infused cognac with a touch of roasted anis, offering a smooth and delightful experience. Rose Pamplemousse pairs the fruity notes of Pineau rosé (a French aperitif) and the pink hues of plum kernel spirits with the tangy zest of grapefruit, creating a cocktail that's both delicate and invigorating.
 

Celebrating Brittany's Salty-Sweet Traditions: Old Caramel

Brittany's rich culinary heritage is celebrated with Old Caramel, a decadent take on the classic Old Fashioned that blends salted caramel with whiskey and a hint of sea salt, capturing the region's unique salty-sweet tradition in every sip.
 

A Blend of Innovation and Tradition: Coconut and Chardonnay, Grain de Café

Coconut and Chardonnay combines the creamy notes of coconut-washed Campari with the crisp elegance of chardonnay grape-distilled gin (known as Djinn), resulting in a refreshingly unique cocktail. Having sipped on this one, I can say it’s on the stronger side of the spectrum, but it would please the Negroni lovers. Grain de Café, meanwhile, brings together the bold flavours of coffee with a hint of amaretto and lemon, offering a refreshing twist on a classic Espresso Martini. This one also was tested and approved by yours truly.
 
What’s more, both these cocktails are presented in Insta-worthy 3D-printed containers that further elevate the tasting experience.
 

A Tribute to the South: Three Musketeers

The South of France is honoured with Three Musketeers, a Martini Flight which presents a vibrant blend of Provençal herbs and citrus, capturing the essence of sun-drenched landscapes and aromatic fields.
 

Homeward Bound to Central France: The Monk's Highball, It's Thyme!

As the journey across France comes to an end, Anyss wraps up in the Centre region, specifically in Limoges, where he was raised. The Monk's Highball is a tribute to the region's monastic traditions, combining herbal liqueurs with a splash of soda for a refreshing and invigorating drink. It's Thyme! celebrates the local thyme, blending it with mezcal and kombucha to deliver an interplay of smoky and refreshing flavours.
