Hey there, dessert aficionados! We have delicious news for you. Remember 2020, the year we all collectively decided to embrace our inner chefs and bakers to cope with the uncertainty of the pandemic and the novelty of work from home arrangements? Well, some of us never went back! When she left Australia for Hong Kong, a few months prior the pandemic, Pauline decided to trade in her corporate gig for the sweet life of crafting mouthwatering pastries. Crazy? Maybe. Delicious? Absolutely. As COVID would have it, her business grew very quickly making her the go-to for homemade, French-inspired treats delivered at your door.
 
In a year filled with ups and downs (thanks, pandemic), Pauline's pastries became the silver lining for many of us. Remember those evenings when restaurants closed early, and we turned to homemade meals with friends? Pauline's desserts, especially her divine lemon meringue pie (my personal weakness) and the chocolate-praline tart, were the cherry on top of those feasts.

Fast forward to now, and Frenchie Toquée is thriving more than ever. With borders open, masks off, and Hong Kong buzzing, Pauline's sweet creations are still stealing the show. From her early morning pastry sessions in Aberdeen to the Taikoo Place pop-up (closing end of Feb – get in there quick!), and the hustle of corporate orders, she's one busy baker. Oh, did I mention the team is growing too? There's a mini "toqué" who's joined the adventure backstage, on top of new kitchen members. Entrepreneur, pastry chef, and mom – Pauline is rocking it all.
